The WCH CH32H417 looks really interesting. Both a RISC-V5F and V3F CPU (dual core, asymmetric), with multiple USB interfaces, Ethernet, and other things.

But it'll be interesting to see what the cost is.

RIght now, I can only find them on AliExpress, and it's $45 for the dev board, and ~$5/ea for the chips.

You're playing in STM32H series at that level, and that's not gonna win.

Since it's just me for today's dinner, I dropped a rather nice 1# ribeye steak in the sous vide at 135F for an hour or so. It'll turn into multiple meals, but, I prefer to cook larger cuts than smaller for reduced liquid loss.

I don't eat much red meat, but I do occasionally enjoy a piece.
